Cookie Co., a Redlands, CA. based chain of franchise cookie shops is on its way to Spokane. The company was founded in 2020 during the pandemic and they say it began as a labor of love, offering the simplest of comfort foods baked at home with curbside pick-up in the founders own driveway.
In August of 2020 the founders Elise and Matt Thomas opened their first location in Redlands, CA. baking up signature cookies that are proprietary to the company. Since then, Cookie Co. has continued to expand via franchising and now has four locations in California, one in Texas and several in the pipeline to open soon with nationwide expansion planned. One such new franchise location is even planned right here in Spokane.
The Spokane location of Cookie Co. will open during the first quarter of 2023. This location will occupy a 2100 Sq. Ft space in the Matilda Building at 1028 N. Hamiliton that was last used as a Forza Coffee Shop.
