Cafe Rio now open in Spokane Valley

This is a follow-up post to a prior Inland Northwest Business Watch post from August 2013

Today ( Jan. 15th )is opening day for the Café Rio Mexican restaurant chain's location in Spokane Valley. The store is located at 13920 E. Indiana Ave. in the Evergreen Crossing shopping center, and just west of Spokane Valley Mall.

The new location is the chain's first location in the Spokane market, but not the first location in the Inland Northwest. Café Rio opened a couple of years ago in Coeur d' Alene. For more info on the business, here is a the former INBW post about Café Rio coming to Spokane Valley-

Café Rio , a successful and rapidly growing chain of Mexican restaurants is opening a new location in Spokane Valley , marking the companies first entry into the Spokane market.
Café Rio's new Spokane Valley location will be in the Evergreen Crossing Shopping Center , next door to Select Comfort / Sleep Number. The plaza and the new restaurant itself are at the corner of E. Indiana Ave. and Evergreen Rd. . The new Café Rio is also easy to find with the building being in sight of the Spokane Valley Mall which is directly east of the restaurant site.

Construction work is well underway with the chain adding many improvements to the building including new exterior visible from I-90. There is no word as to when the new location will open, however it should be open before the end of the year.

While Café Rio is new to the Spokane market it is not new to the Inland Northwest. The chain opened a location in Coeur d' Alene in early in the Summer of 2012 along US 95 in the same center as Fred Meyer. That location is also still open. There is also no word as to if there are any other new locations being planned in the area.

Café Rio is a Utah based company featuring burritos and other fine Mexican foods . The menu is primarily inspired by the foods of Northern Mexico.
